Thèmes de recherche: 1- évaluation des changements dans la composition de la flore bactérienne en fonction des fluctuations de la composition des aliments et des paramètres de conservation, grâce à l’utilisation des méthodes microbiologiques, chromatographiques, chimiques et biochimiques. 2- Lutte biologique antimicrobienne par l’utilisation de microorganismes et de composés naturels (Huiles essentielles, extraits de plantes et épices, acides gras) dans la désactivation des pathogènes et le prolongement de la durée de vie des aliments 3- Application de modèles mathématiques de prévision en microbiologie alimentaire et dans l’évaluation de la variation du comportement microbien à la suite de changements des conditions externes 4- Formulation et optimisation de la composition et du processus de production des aliments, pour l’amélioration du contenu nutritionnel, le prolongement de la durée de conservation et la protection contre le développement des microorganismes pathogènes.
